George Kataras grew up in Athens, where music first shaped his discipline and way of thinking. He began studying music at the age of six and later studied music engineering in Crete, while also working in hospitality. Through that path, he gradually realised that the kitchen was the place where he felt most creatively at home.
After culinary training in Athens, he moved to London and then to Copenhagen, where he worked at the world-renowned Geranium. There, precision, structure and demanding professional standards became defining elements of his craft.
Today, at CUE in Amsterdam, Kataras expresses a cuisine shaped by Greek roots, classical technique and a global perspective. His cooking revolves around fire, seasonality and restraint, allowing the product to lead while still creating moments of surprise.
Within Roots & Routes, his journey enters into dialogue with Noble’s philosophy through a shared commitment to place, precision and creative restlessness.
