Vicky Sevilla is the chef and founder of Arrels in Sagunto, Valencia. Born in Quart de les Valls, she discovered cooking while working in Formentera and later trained at the Costa Azahar School in Castellón. Her path led her back to the Valencian Community, where she worked alongside important local chefs before opening her own restaurant at the age of 25.

At Arrels, located in the renovated stables of a 16th-century mansion, Sevilla has shaped a deeply personal culinary project. Her cuisine brings together avant-garde technique and tradition, with menus based on seasonal, market and local ingredients. Arrels entered the Michelin Guide in 2019 in the Bib Gourmand category and received its first Michelin star in 2021, making Vicky Sevilla the youngest woman in Spain to achieve this distinction.
